FRESHLY DUG FINGERLING NEW POTATOES

Fresh dug fingerling new potatoes are now in season from Sunrise Organic Farm in Lompoc, California! Sunrise grows beautiful red Amarosa, yellow Austrian Crescent and purple fingerlings. The three fingerling varieties are also offered as a rainbow mix.

New potatoes have not been cured, meaning that the skin is thin and delicate. New potatoes are often creamy and have a moist texture. The sugar has not converted to starch yet, so they are sweeter and less starchy than more mature potatoes.

Storage Tip: Keep these refrigerated for a longer shelf life and freshness.

Crispy Roasted Fingerlings Recipe Idea: Cut fingerlings lengthwise into slices and toss with olive oil, melted butter, chopped rosemary and garlic, salt and pepper. Place in a single layer on a foil lined pan and roast at 400 degrees Fahrenheit for 25 minutes or until tender.
